Recipe: Durian Cheesecake

Hello, here's another easy cake recipe for dummy. 


Oreo Durian Cheesecake

I can't emphasize how simple the recipe it is. You must know that Lirong is a very lazy person, so she will always hunt for the easiest recipe to share. So it is. 


Ingredients (adapted from Kitchen Corner):

Base:
160g crushed chocolate marie biscuits (I use oreo cookies)
80g melted butter 

Cheese layer:
450g cream cheese (I use 500g)
80g caster sugar
170g durian flesh (I use 300g)
3 eggs
80g milk
1 tbsp cornstarch

Topping:
1 tsp cocoa powder, 2 tsp water (I replaced with crushed oreo cookies)

Method:


1. To make base, stir all ingredients until combined. Press mixture into base of 18cm (7-inches) cake tin.



2. To make filling, beat cream cheese, sugar and durian flesh until smooth. Beat in eggs, one at a time, beating well after each addition.


3. Beat in milk and cornstarch until blended. Pour the rest of the mixture into tin.


4. Bake in oven at 170°C for 40-45 mins or until light brown. Remove from heat and leave to cool. 


Fresh out from the oven!


After cooling. 


Because I suck with cake decoration, so I dusted some crushed oreo to cover the flaws. I told you I'm lazy. 


Chill in fridge for at least 4 hours or overnight.

Wanted to try the taste a little but ended up eating 1/3 of the cake. #fatgirlproblem You have no idea how hard it was for me not to swallow all the durian while I was making the pulps! :P Haha! So it was me busily making the cake and feeding myself at the same time! So fun! LOL! 


Mummy was really delighted! Oh! and I think mummy looked extraordinary pretty in this photo!

Sorry for spamming so many of my ghostly face. I just got to take a shot with this pretty little thing! :') 

Anyways, all the photos of the cake are raw. I figure this is better for you to see the true colour of the cake. :) So  I was saying it was really a very simple recipe. I took like 30mins to finish everything. I guess the tedious part is only the clearing up. I know right! Oh and of course the verdict! I finished 1/3 of the cake, so do I need to say more? Anyways, the cheese taste didn't come up to be very strong, I guess it was all covered by my mighty durian! The cake was also super ultra soft! I'm serious when I said the cake simply melted in the mouth. #dieindurianandcheeseheaven Alright, it definitely worth that calorie bomb! :)

    1. Hi dear! Thank you so much!:) Yes you can beat the cream cheese using a hand mixer. But it probably will take a longer time and more effort. :)
