Recipe: pumpkin and yam rice

I realized I've been posting lots of my photos of my pumpkin rice but I have never shared the recipe! Since I have friends who requested and I believe in sharing of good food, so here you go. :) 


Ingredients (serves 6)

1 tbsp cooking oil
Pork belly, cut to thin stripes
Dried mushroom (soaked overnight), cut to thin stripes
1 whole pumpkin (skinned), cubed
1 whole yam (skinned), cubed
handful of dried shrimps
1 small dried cuttlefish (optional), cut to thin stripes
2 cloves garlic, peeled and minced
2 small onion, finely chopped
3 cups of rice
1 1/2 tbsp of premium dark soya sauce
water

Directions 

1. Heat 1 tbsp oil in wok and fry garlic, onion until golden brown
2. Add in sliced pork belly and fry until they are just cooked on the surface. 
3. Add dried mushroom, dried shrimps and dried cuttlefish.
4. Add pumpkin and yam cubes and stir fry for about 2 minutes. 
5. Add uncooked washed rice and stir fry for another 2 minutes or when well mixed.
6. Add 1 1/2 tbsp of dark soya sauce and give a good mix
7. Transfer contents from the wok into a  rice cooker.
7. Add water and set rice cooker to cook (water amount should be just covering the contents).
8. After rice is cooked keep warm for a few minutes before serving.

Really simple isn't it? Yups, do try since Halloween is coming up and besides, pumpkin is such a power food!
