Recipe: Tiramisu

I love surprises, pleasant ones of course. For the same reason, I love to surprise the people around me too. Thus, a simple but heart-warming birthday party for the mum, who has been complaining that I'm neglecting her for the boy. :P

Not forgetting the catering buffet that I've gotten to fill everyone's stomach.

It has to be Stamford Catering again. :D

Mum asked why don't I want to try other catering services? 

But I was like, it's good so why change? ^^ #loyalcustomer


To be honest, I've never baked tiramisu before and neither have I eaten enough tiramisu to bake a good one. But! The boy said he LIKE tiramisu. Ok, I need to bake this for sure. :P Sorry mummy, but I think you'll love tiramisu too. Heh. 


Ingredients (adapted from here):

Sponge fingers3 egg yolks + 30g fine sugar
                                                                         3 egg whites + 30g fine sugar + pinch of cream of tartar
                                                                         90g plain flour, sifted



Tiramisu filling250g dairy whipping cream, cold from fridge
                          2 egg yolks + 1 whole egg + 100g fine sugar
250g mascarpone cheese
              3 tsp gelatin + 3 tbsp water, melted

To assemble200ml strong black coffee+ 100ml coffee liquor/rum - combine together
Sponge fingers
Tiramisu filling 
Cocoa powder

Method:

Sponge fingers -  1) Whisk egg yolks, sugar and salt till thick and creamy.
2) In another bowl, whisk egg whites, sugar and cream of tartar till stiff peak.
3) Fold the egg yolk mixtures and meringue together.
4) Fold in the sifted flour and mix well to combine.
5) Pour batter into piping bag (fitted with 1 cm round nozzle).  Pipe strips of batter onto baking paper.
6) Bake in preheated oven of 180C for about 15 minutes or more till golden.


Tiramisu filling - 1) Whisk the cold cream to soft peak.  Keep in fridge while you work on the rest.
2) Place the eggs and sugar in a stainless steel bowl.  Place over a pot of hot water and whisk till thick and creamy (be careful not to cook the eggs!).
3) Add in the mascarpone cheese and whisk till smooth.  Pour in the melted gelatin and mix well.
4) Fold in the whipped cream from step 1 and mix well.

To assemble - 1) Dip finger sponges into coffee mixture and place them onto a 7'' square pan with removable bottom.
2) Pour 1/2 of the tiramisu filling into the pan 
3) Repeat by dipping finger sponges into coffee mixture and place them over the tiramisu filling. 
4) Pour the remaining 1/2 tiramisu filling over. Smoothen the surface  before placing it  in fridge for at least 3 hours to set the cake.
5) Remove cake from the mould once it has settled, dust the top with cocoa powder and decorate the cake as desired.  Serve chill.

Can't believe how successful the cake was. :')

    1. Hi! Yes, normal black coffee is sufficient. It all depends on how strong the coffee taste you want for your tiramisu. :)
