Here we are with the usual #sundaypancakeparty.
Theme of the week was SINGAPORE. Set by none other than the patriotic me. Heh.
Basically you can use any ingredients that relates to Singapore. For me, I used PANDAN and COCONUT MILK, inspired by Singapore's famous pandan chiffon cake of course (do try if you ever have a chance of visiting our little red dot).
Stacks of pandan & coconut milk infused pancakes (super duper fragrance!), layered with homemade raspberry jam and topped with homemade mashed sweet potato salad. Definitely a carbo-loaded start to the day. :D
While I thought the theme was a huge challenge as Singapore being a theme is kinda.. vague. But nonetheless the girls blew me away with their creativities again.
honeyydrizzle - Gluten-free coconut pancakes layered with dragonfruit Greek yogurt and more dragonfruit.
Ngjiajia_ - fried 'black' carrot cake - pancake style.
Tumblinbumblincrumblincookie - gula Melaka pandan pancakes with coconut cream and two cookie dough ondeh ondeh balls infused with pandan (screwpine leaf) juice, filled with palm sugar and then rolled in with some fresh coconut.
Serrhannie - pandan pancakes and layered it with peanut butter. And a sprinkle of desiccated coconut.
