Recipe: Berries Cheesecake *Non-baked*


Berries Cheesecake.

Because birthdays are not just an excuse for us to feast in cakes, it is also my favourite excuse to bake a little something. Heh. :D

This is also a very special cake because it was baked with the assistance from my brother because he said he wants to learn baking from me so that he can bake a cake for me next time. :')

Totally melted when he said that. Whether he will bake one for me doesn't matter at all. It's the thought that counts. :')

Ingredients:
Crust
100g digestive biscuit crumbs
50g melted butter

2. Filling
500g PHILADELPHIA Cream Cheese Block, softened
1 cup milk 
1/2 cup caster sugar
1/4 cup lemon juice
1 tbsp lemon zest
3 tsp gelatine, dissolved in 1/4 cup boiling water
Berries (blueberries and strawberries for me)

Method:
Crust:
Combine crushed digestive biscuits and melted butter together in a mixing bowl. With the back of a spoon, press the biscuit crumbs firmly onto the base of the baking pan. Chill in the freezer while you prepare the filing. 

Filling:
1. Using a mixer, beat cream cheese and sugar until smooth. Beat in the gelatine mixture, combine well. 
2. Add in the milk and lemon juice, continue to beat until smooth.
3. Fold in the lemon zest and berries.
4. Pour mixture into a prepared 6'' pan and refrigerate for at least 4 hours or overnight. [You may want to top the cake with additional berries for aesthetic purposes! ^^]

THIS RECIPE IS ALMOST IDIOT PROVE RIGHT?! 

That's why I chose this particular *non-bake* cake to teach my brother. :D

I guess for beginners, it will be a new recipe to start from! Not difficult at all nor time-consuming! Best of all, cheesecake is always a yummy treat! ^^



Thought that the cake looks real plain being just.. white? 

So the itchy hand me topped the cake with some lots of fruity berries! :D Of course some colourful rainbow sprinkles won't hurt too? :P 


Fell in love with the smooth cut of the cake like instantly? <3 

A little tip to everyone, cheesecakes can taste a little overwhelming after a few mouths? I sure most of us will agree. So the trick here is lemon! Some lemon juice would help to balance that "heaviness" from the cream cheese. :)


This berries cheesecake proves to be "berry" popular among the family. They commented that the cheesecake tasted like pudding! Extra refreshing to eat it when the Sun is crazily hot these days!

This cake was also my "life-saver" when I got my wisdom tooth removed. Basically was leading a miserable life of porridge for my meals until I realised that I can simply suck and swallow this cheesecake with ease! Yay, to food that has taste again!! LOL! 

Well, if you had your wisdom tooth removed, you'll surely be able to relate. Haha!
