Recipe: Matcha Granola // BoxGreen Review

Recently, I went to Japan and ate a ton (read my dayre for my travelogue!) so I was very happy when BoxGreen sent me a box of healthy, wholesome snacks! :)

Immediately I made myself a greek yogurt parfait with the snacks and fruits! :D

My body felt so happy after this? Because I haven't had fruits for 8 long days!! Omg.. :O

But I'm not complaining because I had a great trip! Hehe..

Anyway, I made a matcha granola with the snacks sent to me! Read on for the recipe and a discount code that you can use when you checkout at BoxGreen! :)

^^

These are the 4 snacks that came into my box! :)

The Peanut Pretzel Muddy Bites and Coco Berry Smoothie are the new snacks of the month!

I thought the Cheng Tng is a very a very interesting flavour too I feel. But my favourite of the 4 is the Tart & Tangy Appleberry! :D

Thus, I chose the Tart and Tangy Appleberry to layer my yogurt parfait. Heh. :D

I didn't expect myself to be so stuffed after this parfait! Haha! I don't even feel hungry at all until late afternoon (had it for breakfast)!

Another way to enjoy the snack is to make it into granola! :D

Using the Cheng Tng snack and the matcha powder I got from Japan, I made a matcha cheng tng granola! ^^

Ingredients:
2 cups rolled oats
1 cup cheng tng snack
30g matcha powder (I like strong matcha taste, you can reduce to 20g)
1 egg, lightly beaten
4 Tbsp Honey
2 Tbsp oil

Method:
1. Preheat oven to 150 degree Celsius and line a baking tray with parchment paper.

2. Combine all dry ingredients in a mixing bowl and mix well.

3. Add in the lightly beaten egg, honey and oil. Toss and mix to ensure the mixture is coated evenly.

4. Spread the mixture on the baking sheet and bake for 30 minutes (stir and mix after 15min).

5. Let the granola cool before storing in an air tight container.

This method of granola is different from my previous one because I added egg in to 'glue' the oat mixture together! I kinda prefer this version to my previous one. :)

Store in an air tight container and this healthy snack can last up to 2 weeks! :)

But usually I'll finish it in less than a week! Haha! :P

Yogurt parfait with fruits and my granola. :)

Really love how healthy food can be so yummy too! ^^

Enjoy and eat healthy too! :D

Remember to quote 'lirong20%off' when you check out from BoxGreen

Love,
Lirong.
