Last weekend I was fortunate to be invited to Tools of the Trade (ToTT)'s 3rd Anniversary celebratory event, where they announced the launched of a cookbook, 'Best Brunch Ever - delicious morning recipes to savour' as well as the commence of ToTT's new e-site. So do read on for more details! ^^
"Best Brunch Ever - Delicious Morning Recipes to Savour" cookbook, at a cost of only $12.90, features 24 easy-to-prepare recipes by 8 well-known celebrity chefs in Singapore:

2. Dallas Cuddy, head chef of The Prime Society
3. Nicolas Joanny, chef-owner of Nicolas Le Restaurant

5. Kenjiro 'Hatch' Hashida, master chef of Hashisa Sushi at the Mandarin Gallery
6. Eric Low, chef-owner of Lush Epicurean Culinary Consultancy

The cookbook showcases brunch ideas from across different cuisines (American, Australian, Japanese, Vietnamese, Singaporean, Spanish, Italian and French). Trust me brunch is never simple eggs and toasts. Along with each recipe, the chefs would also share handy cooking tips and recommended tools for ease of preparation. I thought this is really useful especially for amateur homecook or even beginners. Personally, I can't wait to get my hands' on Chef Eric's 'The great Singapore breakfast' recipe! :D

The event kick started with an Italian-style brunch by Chef Antonio Facchinetti, Chef de Cuisine of Prego Restaurant at Fairmont Singapore.
Spaghetti Piccanti - Spaghetti with calamari, anchovies, bread crumble, chilli, garlic and fennel.
Can you believe that this pasta was cooked up in less than 5 minutes by Chef Antonio?! I would have thought he's a magician.
I thought this was a very interesting pasta as I've never seen breadcrumb as part of a pasta ingredient!
Next up was Chef Nicolas Joanny from Nicolas Le Restaurant who presented to us a French-style brunch.
That's me going up close trying to pick a tip or two. :P
Eggs 'A La Coque'
Steamed runny egg yolk in it's shell, topped with sherry vinegar cream and paired with crispy deep-fried feuille de brick-wrapped prawn with tarragon leaves. I simple love how beautiful Chef Nicolas has plated this dish and not to mention how surprisingly easy it is to prepare!
Yolk that runs has to be good, especially with the addiction of sherry vinegar cream which gives a super refreshing touch to the entire food experience.
Absolutely love this deep fried prawn which was amazingly juicy and I could even hear that crispy sound on every bites.
Next, we had an American-style brunch brought to us by Chef Dan Segall, The Big Idea.
I have to say Chef Dan was super fun-going and humorous! He definitely created a joyous atmosphere for us as we waited patiently for him to work on his dish using the hotmixPRO machine (as featured).
I was most excited about this dish because of the cornbread. Yes, cornbread is amazing.
Cornbread Wedges with Bacon Jam
Do you know to make bacon jam at home you need hours to do so? But with the hotmixPRO machine, 20 minutes is all you need to enjoy this delicious jam!
If I have to choose, this is definitely my favourite brunch menu. I'm sold by the wonderful sweet and savoury pairing of the cornbread and bacon jam. The bacon jam was seriously the highlight! It was so packed and filled with flavours! Definitely hard to believe that it was cooked under 20 minutes.
Last but not least, we had Chef Chi Quang Trinh from Addictions Café and Remedy Bar to present to us a Vietnamese-style brunch.
Perhaps due to our Asian background and we are more reserved, Chef Chi is a very shy and soft-spoken person. However, he is just as talented.
Bang Cuon - steamed rice rolls.
Because pancakes for brunch is too mainstream, Chef Chi created a flour batter to make white rice roll skins and filled with minced pork, black fungus, onion and flavoured with fish sauce. If you're looking for a healthy start to the day, this would be the perfect choice.

Once again, thank you ToTT for the invitation! It was definitely an eye-opening experience to witness the 4 very talented chefs at work and of course to be blown away by all the wonderful kitchenwares. Honestly I wish I could bag them all home!!
