Recipe: Flourless Chocolate Cake *3 ingredients only*


A month ago, the boy and I celebrate our one year anniversary. ^^

I knew all along that I'll be baking him a cake. The problem was, what cake to bake? He loves cheese, but I've baked quite number of cheesecakes for him. He loves fruit tarts, but I won't have enough time to make that. :( 

HE LOVES CHOCOLATE! 

But chocolate cake is like so boring.. Hmm.. Headache right?? 

Hahaha! 



Until I chanced upon a flourless chocolate cake recipe and I was like, "Oh ya! A flourless chocolate cake is just the right one to bake for a true chocolate lover!"



Most importantly, it is really simple! (I tend to bake simple cakes only? Oops. :P)

Just 3 ingredients needed. Can you guess what are they? No, don't scroll down for the answer yet! 


Ingredients:
8 large eggs, cold
450g chocolate of any kind, coarsely chopped (I use a mixture of dark and semi-sweet chocolates)
200g unsalted butter
Fruits (optional)
Icing sugar (optional)

Method:
1. Preheat oven to 180 degree Celsius. Line the bottom of an 8-inch pan with parchment paper and grease the sides of the pan. Wrap the sides of the pan with aluminium foil to prevent seepage (will be baked in water bath).

2. Using a mixer, beat the eggs at high speed until the volume doubles, about 5 minutes. 

3. Melt the chocolate and butter together over a double boiler on the stove or you can choose to melt them in the microwave.

4. Fold the beaten eggs into the chocolate mixture in 3 batches. Mix well until the batter is homogeneous.

5. Pour the batter into the prepared pan. Gently tap the pan to remove any air bubble trapped. 

6. Place the pan (which is sitting in a larger pan) into the oven, very carefully pour in enough boiling water to fill half of the larger pan. 

7.  Bake the cake in a water bath for  25 minutes or when a skewer comes out clean when inserted. Remove the pan from the water bath and set on a wire rack to cool.  If desired, lightly dust the cake with icing sugar and top with berries or whatever that you like! :)

I love the recipe so much that I baked it a second time and topped with walnuts. :D It looks a bit like brownies? 


But definitely much more moist than brownies!! More chocolatey too!!

YOU REALLY LOVE CHOCOLATE. 

Unlike many flourless chocolate cake recipes which have sugar added, I refuse to do so. Why would I want to mask the true taste of chocolate? 


Goes well with a scoop of chocolate as well! ^^
