Recipe: Chocolate Mousse with mandarin oranges + SunMoon's GIVEAWAY


Hello everyone! How was Christmas for you? ^^ 

Christmas this year was rather special for me because this is the first time I actually cooked up a Christmas feast! 

As you can see from the photo above, menu of the night was: 
1. Roasted Turkey 
2. Roasted Pork Knuckles 
3. Baked Honey Glazed Ham

5. Beers and fruit juice

For this post I'm going to be sharing with everyone a rather simple but super delicious chocolate recipe! 

Yups, it's this chocolate mousse with mandarin oranges that I've made for my family as part of the Christmas dinner. ^^


It's a very special recipe because:

1. instead of the normal chocolate mousse that you'll find, I've added a digestive biscuit crust at the bottom for an additional bite. 

2. too much of a good thing may not always be a good thing, especially with a dessert as rich as chocolate. One usually feel jelak after a few mouths. Well, at least my family often does. To prevent this, I added SunMoon's mandarin oranges into my chocolate mousse. I feel that the tangy taste from the mandarin oranges complemented the bittersweet chocolate very well!

A bit about SunMoon's product before I go further into the recipe. 

SunMoon Food Company Limited is an Asian brand that emphasizes on providing quality fresh fruit and products to their customers around the world! 

For this recipe, I've used SunMoon's fruit cups (mandarin oranges/peaches/mixed fruits). I'm please to know that instead of soaking the fruits in heavy sugar syrup, the natural fruit chucks were immersed in pure 100% apple juice with no additional sugar added! 


Ingredients (make 6 servings):
Crust:
50g digestive biscuits, finely crushed
25g unsalted butter, melted

Filling:
120g chopped chocolate chocolate (I used a mixture of bittersweet and semisweet chocolate)
2 eggs, separated
2 tbsp sugar + 2 tbsp sugar
1 tsp vanilla extract
1/8 tsp cream of tartar
120ml heavy cream

Method:
Crust:
Combine crushed digestive biscuits and melted butter together in a mixing bowl. With the back of a spoon, press the biscuit crumbs firmly onto the cups/glasses Chill in the freezer while you prepare the filing. 

Filling:
1. Melt chocolate over a pot of boiling water. Set aside to cool for a few minutes before beating in the 2 egg yolks. 
2. Using an electric mixer, whip the egg whites with the cream of tartar until foamy, then gradually add 2 tbsp of sugar and continue to beat until stiff peak. 
3. In a separate bowl, whip the heavy cream with the other 2 tbsp of sugar and vanilla extract. 
4. Fold the egg white batter into the chocolate mixture.
5. Fold the whipped cream into the above mixture.
6. Spoon 1 tbsp of chocolate mousse into the serving cups/glasses with crust, then layer with some SunMoon's mandarin oranges, cover the fruits with another 1tbsp of chocolate mousse. Finally top with more mandarin oranges. Repeat for the rest of the cups. 
7. Cover and refrigerate for at least 3 hours or overnight.

Rich and good chocolate mousse (or chocolate pudding as named by my mum). Anything of mousse dessert always capture my heart because of the smooth and tofu-like texture. ^^ 

The family actually like this a lot as well, especially with the addition of the crust and mandarin oranges! They said it is less 'boring' to eat. Haha! I think I get what they meant, as the dessert is not purely just chocolate!
