Recipe: Durian Moussecake // Mother's Day Celebration


Hello everyone!

I'm back to update on this year's Mother's Day celebration for my dear mummy. :D Though I've already shared on my Dayre. Haha! 

So this will be a simplified version + sharing of the durian moussecake that I've baked for my mum! ^^

Mother's Day celebration was kept simple, as always. I think what mummy really wants is our company. That's the most important part. :) 

We spent the afternoon shopping and bringing the parents around before headed home to prepare for dinner. 


If you have followed me for long, you probably will know that my family enjoys dining at home then to head out for dinner, especially on special occasions when the restaurants are bound to be crowded. 

There's no place like home and food taste even better with love as part of the ingredient. :)

Anyway, here goes our dinner that night. :)

4️. Black pepper chicken chop with creamy lemon sauce .

6️. Seafood bisque

Although we could opt to dine out to save time and effort. But it's just different to be able to make a dinner specifically for mother and to hear her compliment that we are cooking better and better! <3


It can be a sumptuous meal even at home.

Durian mousscake for the durian-loving mother!

Baked 2, one for mummy, the other for soon-to-be-MIL. :D 


The base of this cake is a Japanese SoufflĂ© cheesecake, followed by durian mousse and finally a durian kueh as decoration. :) 

Ingredients:
125g Cream cheese, room temperature
  120g White chocolate (Meiji brand)
    3 Cold Eggs, 70g each
Method:
1. Line a 7 inch cake pan at the bottom and grease the sides with butter, set aside.
2. Separate the eggs. Place egg whites in the fridge which makes the meringue more stable.
3. Preheat oven to 170 degrees C.
4. Break white chocolate into pieces in a large bowl and melt in a double boiler over hot water. Mix chocolate to smooth. Then add cream cheese into it and stir till smooth with a hand whisk.
5. Remove the bowl from double boiler. Add egg yolks, mix well and set aside.
6. Whisk egg whites with an electric mixer until firm peaks form. If it's thick enough, you can turn the bowl upside down without it sliding out.
7. Add 1/3 meringue into the cream cheese batter and blend well with a rubber spatula. Then add the rest of the meringue and mix well.
8. Drop the pan lightly on the counter top to release the air bubbles out of the batter.
9. Steam bake the cake for 15 minutes then lower the temperature to 160 degrees C for 15 minutes. Turn off the oven temperature and leave the cake inside the oven for another 15 minutes. 
10. Leave the cake to cool completely before removing from the cake pan and slice into 2 equal pieces horizontally. 

Recipe for durian mousse:
Ingredients:
300g durian flesh
100ml fresh milk
300ml whipping cream
10g gelatine
50g lukewarm water
30g icing sugar

Method:
1. Dissolve the gelatine in lukewarm water, let it stand to soften. 
2.  Mix milk and durian flesh till well blended. Set aside.
3. Whip the whipping cream with icing sugar till whipped form. 
4. Add in dissolved gelatine to the durian mixture. 
5. Add the steps 4 with step 5. 
6. Fold in the whipped cream. 

To assemble:
1. Place the bottom layer of cheesecake onto an 8'' removable cake pan.
2. Add half the portion of durian mousse.
3. Repeat process 1 and 2 
4. Keep in the fridge for at least 6 hours, preferably 


So glad that the cake was well recieved by my family and his family!

First time, the cake was finished in a night.. Haha! :P
