Recipe: 15mins pancakes

'I'm selfish, impatient and a little insecure. I make mistakes, I am out of control and at times hard to handle. But if you can't handle me at my worst, then you sure as hell don't deserve me at my best.'

'The best love is the kind that awakens the soul; that makes us reach for more, that plants the fire in our hearts and brings peace to our minds. That’s what I hope to give you forever.'

'What doesn't kill you makes you stronger, stronger. Just me, myself and I.'
Ingredients:1 cup plain flour1 cup milk1 egg1 tsp baking powder2 tbsp sugar2 tbsp butter/oil
Method:
  1. In a bowl, whisk together milk, butter/oil and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not over-mix; a few small lumps are fine).
  2. Heat a saucepan (nonstick or cast-iron) over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.
  3. For each pancake, spoon 2 to 3 tablespoons of batter onto saucepan, using the back of the spoon to spread batter into a round (I use a heart-shaped mould bought from Daiso).
  4. Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a plate. Continue with more oil and remaining batter. (You'll have 4 pancakes.) Serve warm, with desired toppings.
