Recipe: Pumpkin rice with Quaker Oats for Rice

Today, I'm bringing you a special recipe. 

Ok, but I think judging from the title of my post, you would more or less have an idea of what this recipe will be on.

So yup. Not the normal pumpkin rice that I've shared previously. This is a pumpkin oat rice, using Quaker Oats for Rice product! :)

I think the benefits of oats need no introduction. Now, with the addition of pumpkin, it makes this one pot dinner even more nutritious! :D 

Furthermore, you won't believe how fuss free this is!

Well, because most of us will have a rice cooker at home? So simply let the rice cooker do the job for you! Just 45 minutes and you'll have a yummy and nutritious dinner waiting to be served. ^^

Oh yes, did I mention that Quaker Oat for Rice doesn't require you to wash beforehand? 

On a busy work day, I find every possible way to cook using the least amount of effort and time needed. Heh. :P 

Ingredients (serves 4)
1 tbsp cooking oil
Dried mushroom (soaked overnight), cut to thin stripes1 whole pumpkin (skinned), cubed

1 small cabbage, sliced thinly
2 cloves garlic, peeled and minced2 small onion, finely chopped2 cups of rice + 1 cup of Quaker Oat for Rice1 tbsp premium dark soya sauce

1/2 tbsp premium light soy saucewater

Directions 
1. Heat 1 tbsp oil in wok and fry garlic, onion until golden brown.
2. Add dried mushroom, pumpkin and cabbage. Give a quick stir. 

3. Add the dark soy sauce  and light soy sauce. Give it good mix before turning off the fire.
4. Add uncooked washed rice and oat rice. Stir well with the mixture. 
5. Transfer contents from the wok into a  rice cooker.
6. Add water and set rice cooker to cook (water amount should be just covering the contents).
7. After rice is cooked, keep warm for a few minutes before serving. 

You'll notice that mine is a vegetarian version, but feel free to add in some meat if you wish. :) 

Like always, my recipe is pretty versatile. In fact, I recommend you to substitute the 2 cups of rice with brown rice!

Overall, I think with the addition of Quaker's Oats for Rice, it gave the pumpkin rice more bites. 

I was so happy to see my family being able to accept this change! The guys even when for second servings which is rare because the rice has no meat added for them. Hahhaha! :P
