Recipe: Cheesy Baked Eggs + The Laughing Cow's Biggest Campaign of The Year


Brunch is almost a every weekend thing for me on the weekends! Just because I want laze a little longer and bed, and I want to feast like a king queen! :D 

Anyway, besides eating, I'm sure you'll know I enjoy the process of making the food as well! So one of the Saturdays, I decided to invite my gfs overs for brunch! To make them my guinea pigs!:P 

Nah. Just kidding! Haha! :P

A total of 6 dishes completed in an hour! Yes it's possible! You just need to plan ahead, and of course a good kitchen helper, like him. <3



French Toasts.

Just gonna repeat what I've said on dayre (may sound familiar if you're following me there!^^)

I like soft and fluffy bread and this includes french toasts as well! So my secret to do that is.. 

add milk! 

Yups. I'll let my bread soak in a mixture of eggs and milk before pan-frying. :) 

Try it the next time! You might just like it as well! ^^


Sunny side up eggs.

Served with chipolata  (my favourite type of sausages!:D), creamy mushrooms and garden salad. :) 


Ham and Cheese Sandwiches.

Sad that I don't seem to be able to slice my sandwiches nicely! T.T 

Any tips to share on slicing sandwiches? :)

By the way, did you spot the pair of love birds? Hehe... :D 

They are from ToTT and meant for cupcakes decoration, but I thought they look cute on the sandwiches too! Heh.

Big Breakfast.

Because I can't do without my scrambled eggs! Hehe.. 

Tried American-style scrambled eggs this time round (Jamie Oliver's recipe), it's really awesome! Although I like my British way as well. Hehe.. 

Remember, a good scrambled eggs doesn't require any milk, cream or whatsoever. Just eggs! ^^


Cheesy Baked Eggs.

Finally, the favourite of all. :D Which was created accidentally. Hahahaha! I suggest you go read my dayre because I'm lazy to repeat my old grandmother story. :P


Ingredients (serves 4):
2 Tbsp olive oil
1 large onion, diced
3 garlic cloves, diced
Button mushroom, sliced thinly
Sausages, sliced thinly
Cherry tomatoes, halved
3 eggs
Laughing cow  cheddar cheese x3,
Laughing cow cheese wedges x 3
1.5 cup milk
any bread to serve (best if toasted)
Direction:
1. In a large skillet, heat oil over medium-low heat. Add the onion and garlic, stir fry for a minute or so until fragrant. 
2. Add in the sliced tomatoes, sausages and mushroom. Stir-fry for about 5 minutes. 
3. Add in the milk and cheeses. Let it simmer until the sauce has thickened. 
4. Gently crack in the eggs evenly around the pan over the sauce. Let it simmer until the eggs are just set, about 5 minutes. 
5. Serve with lots of toasted bread/pita to mop up the sauce!

Actually, the whole idea of this is pretty the same as Shakshuka! Except, this is cheese and not tomato base. :) 

Perfect for cheese lovers I would say! ^^

Also, as mentioned before, you don't have to follow strictly to the ingredients that I've used. be creative and add your own ones as well! 


Comfort food. ^^

Notice that my egg yolks still appear to be a bit raw? No worries on that because I'm serving on the skillet directly! So the hot pan will continue to cook the egg yolks. :)
