Recipe: Nasi Lemak

Another fancy dinner created for the family, Nasi Lemak.


Nasi Lemak is an extremely popular in Malaysia and Singapore. It's name literally means 'rice cooked in cream', a fragrant rice dish cooked in coconut milk and pandan leaf. 



Ikan Bilis and Peanuts:
1 cup ikan bilis (dried anchovies)
1 cup peanuts
Salt

1. Rinse the dried anchovies and peanuts and drain the water. Fry the anchovies and peanuts until they turn light brown and put aside.

2. Toss the anchovies and peanuts with salt. 



Fried egg, should be explanatory? :P



Fried chicken, explanatory too? :D 


The most important thing is definitely the rice. 

Coconut milk steamed pandan rice:
2 cups of rice
1 bundle of pandan leaves
200 ml coconut milk
1/4 pandan paste mixed in water.**

Just like cooking your normal rice in a rice cooker, rinse your rice and drain. Add the coconut milk, probably not enough to cook the rice so you top the rest of the water needed with the pandan paste water. Add the pandan leaves into the rice and cook your rice as per normal in the rice cooker.

** I added in pandan paste to enhance the aroma of the rice. It's optional, you can replace with plain water to cook if you wish. 


I know I missed out the essential of Nasi Lemak, sambal chilli. :( I would totally wish to have some chilli, but I'm banned from chilli as for now. T.T So do go ahead and add in your chilli!
