And I always love to experimental with new things in the kitchen! Haha! Thus, the birth of laksa linguine! :P
Managed to bake and cook these table of food under 2 hours! All with the great help of Dancing Chef's convenient laksa sauce packet! ^^
I'll always use the weekend to bake something for Mr Tan and my family. :) This week, I've decided to revisit cheddar cheesecake (because cheesecake is his favourite).
Nope, I didn't make any typo error here. It is indeed cheddar cheese that I've used and not the normal cream cheese. :)
Bear with my ugly drawing on the cake ok? That was meant to be a surprise for Mr Tan. :P
Obviously, needs more practice! Heh.
Ingredients (source)
6 slices of cheddar cheese (I use Laughing Cow)
100g fresh milk
100g unsalted butter 6 egg yolks6 egg whites100g caster sugar 100g flour
Method
1. Place butter and tear up cheddar cheese slices in a bowl over a pot of simmering water, take a spatula and stir to melt, then add in milk and stir until all melted and mixed together. Set aside to cool slightly before use.

2. Mix the cheese mixture with the egg yolks

3. Sift in the flour into the egg yolk mixture. Mix well.

4. Preheat the oven to 150C. Grease and line the baking pan.
5. In another mixing bowl, beat egg white till foamy. Gradually add in sugar and beat till stiff peaks.
6. Fold in 1/3 of egg white mixture with the main batter. Mix well before folding in the reminding.
7. Pour the batter into the prepared pan and smooth out the surface.
8. Steam- bake the cake in the oven for 60 minutes at lower rack or till the tester comes out clean.
9. Let cake sit inside the oven for 5mins with oven door ajar. Remove from oven, immediately remove cake from cake pan, cool on wire rack.

I know some of you might be confused with 'steam-bake'? Basically just put the baking pan on another larger pan and fill that larger pan with warm water!
This is my first attempt of this cheddar cheesecake! Was introduced to this version of cheesecake by Honeybeesweets
It looks exactly like the normal Japanese cheesecake ya? Just as soft and light!
Except, there is a slight hint of saltiness in this cake. I really like it! ^^
If you're a fan of cheddar cheese, the more you should try! :D
Anyway, so while the cake was being baked, I have the time of 60 min to cook my laksa linguine! ^^
ps: I spent less than 30 min to make the cake batter. :)
I simply follow the instructions given on the packet to cook this! Less than 30 min to cook ok!
This is why it's a convenient packet! haha!
Of course, I did my own modification. I used pasta (linguine for me) and I added milk and cheese! :D
It's very similar to the creamy seafood pasta recipe that I've previously share on my dayre! :)
Because I was doing a 'dry' version of laksa, I have more than enough paste! Why no food (including sauces)! So I made laksa mussels too! :D
I love the combination of seafood and spiciness!!! Somehow covers the 'xing' taste of seafood for me. :)
Even got the time to cut some fruits right before the oven sounded. ^^
