Recipes: Matcha Baked Eggs // Parmesan Cheese Baguette

If there is just one meal that I have to choose to be my favourite, I'll take brunch. 

Because it means I get to wake up to a time that's in between of breakfast and lunch. 

Because it means I have all the reasons to eat a 'heavier' meal, since I'm technically having 2 meals at a go. 

Because it means I get my bread and egg fix, and they are kind of like my staple food. 

Yes, I love brunch, look up on my brunch recipes if you haven't. :)

Today, I'm adding on the collection with a very daring creation - matcha baked eggs. 

Before I go into that, here's a more 'normal' baked eggs. Haha! 

A lazy version of Shakshuka. :D

And this is exactly why I love the combination of bread and baked eggs. I could easily finish half a loaf!

On first look, perhaps you might think this is a spinach baked eggs?

Matcha Baked Eggs served with toasted parmesan cheese baguette. 

Ingredients:
2 Tbsp organic coconut oil
1 large onion, diced
3 garlic cloves, diced
Mushroom, sliced thinly
Tofu, cubed
Cherry tomatoes, halved
3 eggs
1.5 cup milk + 2 tbsp matcha powder
3 slices of cheddar cheese

Method:

1. In a large skillet, heat oil over medium-low heat. Add the onion and garlic, stir fry until fragrant. 

2. Add in the sliced tomatoes, mushroom and tofu. Stir-fry for about 5 minutes. 

3. Add in the milk mixture and cheeses. Let it simmer until the sauce has thickened. 

4. Gently crack in the eggs evenly around the pan. Let it simmer until the eggs have just set, about 5 minutes. 

5. Serve with lots of toasted bread to mop up the sauce!

*ps: like I always say, the ingredients are very flexible. Add your favourite ones! :)

Toasted parmesan cheese baguette. 

Ingredients:

Baguette, sliced

butter

parmesan cheese powder

dill

Method:

1. Spread some butter on the sliced baguette.

2. Sprinkle dill and parmesan cheese powder on the buttered baguette.

3. Toast in a preheated oven at 170 degree Celsius for 5 minutes.

4. Serve immediately.

My alternative to garlic bread for now. So good! :D

Cooking/baking is fun when you think out of the box and take it as an adventure in the kitchen! ^^
