Recipe: Creamy mushroom using Laughing Cow Cheese


Who doesn't like to wake up to a yummy breakfast/brunch? In fact I could have a plate of "all-day-breakfast" any time!

Today I'm going to share with everyone a very simple recipe - stir fried creamy mushroom. This is one of my favourite item on my breakfast plate. It's nutritional, yummy and most importantly.. EASY TO MAKE! :D 

Come on, when you woke up from hunger, the last thing you want to do is to make anything complicated. 


Ingredients:
shiitake mushroom, sliced 
cherry tomatoes, halved 
minced garlic
3 cubes of laughing cow cheese (flavour of your choice)
1 tbsp cooking oil

Method:
1. Heat up a saucepan with cooking oil before adding the minced garlic. Stir fried till golden brown.
2. Add in the shiitake mushroom and tomatoes, mix and stir fried. Cover and cook for a minute.
3. Add in the 3 cubes of laughing cow cheese. Mix well to ensure that all the mushroom and tomatoes are evenly coated (you can add in more cheese if you prefer a more creamy texture.)
4. Dish and serve immediately. 

Notes:
1. can replace shiitake mushroom with any other mushroom. :)
2. no fix combination, can always replace cherry tomatoes with something else, any mushroom type maybe? 
3. I've tried different cooking this creamy mushroom with different types of cheese, I feel that laughing cow is still the most suitable. It gives a very smooth and creamy texture and doesn't harden when dished. On the other hand, when cooked with other brands of cheese, texture is less smooth and it hardens too fast when served. :/ 


Besides, using laughing cow cheese in my cooking, of course laughing cow cheese makes a great, nutritional spread on the bread! Surely, you wouldn't need me to tell you about the health benefits of cheese eh? ^^


Laughing cow cheese can be use for baking as well! Yup! Will be sharing this Matcha strawberry tofu cheesecake on a separate post, so look out for that! :D
