Recipe: Popiah

I'm like a SERIOUS, CRAZY fan of popiah. I could literally eat it all day, any day without getting sick of it!! 

For my love of popiah.. 


I forced the family to have a popiah party with me. :P 

Ingredients from clockwise direction: shredded cucumber, beansprouts, hard boil eggs, prawns, crabsticks, tau kwa (firm tofu), popiah main filling, chilli sauce, sweet sauce, crushed peanuts, coriander, lettuce and of course popiah skin.  

It may seem like there are too many ingredients to prepare (actually yes), but it's pretty simple, except the filling maybe. 


Ingredients for main filling:
1 whole jicama, shredded
3 large carrots, shredded 
2 heads of garlic, finely minced
2 1/2 tbsp light soy sauce
1 tbsp dark soy sauce
pepper to taste
1 tbsp vegetable oil
Method:
1.  Heat up oil in your wok before frying the minced garlic to golden brown. 
2. Add in the shredded carrots, stir fried briefly (2mins). 
3.  Add in the shredded jicama, stir fried briefly for another 2mins. 
4. Add in seasiongs, continue to stir (don't need to add water) and cook until vegetables are tender and there should be no gravy. 

To serve:
1. Smear a little sweet sauce and chilli sauce onto a popiah skin. 
2. Layer with a piece of lettuce before putting in 1-2 tbsp of popiah filling.
3. Then add in a little of the rest of the ingredients and roll it up. Roll can be served whole or cut into 2 or 3 pieces.


The trick to rolling a good popiah is never never be too greedy! That says don't try to overwhelm your popiah skin with too many ingredients, that will only make the skin tears in the end. Also,the less wet the ingredients are, the less lightly the popiah skin will break. 


Though the preparation for this popiah party is seriously tedious, it's worth every amount of hardwork when you see the family enjoying themselves. <3 


6 of us finished like 50 popiah skins and 2 roasted chicken.
