Recipe: Vietnamese Pandan Waffles


Another quick and yummy breakfast / brunch recipe that I'm going to share with everyone today! :D 

As long as you have a waffle maker! Mine is a Cornell's waffles maker, I got it for less than $30 if I'm not wrong. :)  

Hah. Actually if you follow me on my dayre, you would realised that I've shared the recipe over there! Hehe.. I should be fair right? So I'm posting the same recipe on the blog as well~


Ingredients
(Dry ones) 
120g plain flour
2tbsp sugar (adjusted to my liking, I recommend about 50g for normal tasting
2tsp baking powder 
Pinch of salt
(Wet ones)
1 egg, beaten
1/2 tsp pandan paste
200ml coconut milk*
2tbsp butter 
*You can always replace coconut milk with other liquids like milk. 
Method:
1. In a large bowl, mix wet ingredients with a whisk. 
2. In another bowl, mix dry ingredients.
3. Add (1) into (2). Whisk until the batter is just smooth. Do not over mix. Let the batter rest for 30min in the fridge. 
4. Grease and preheat the waffles maker.
5. Pour waffle batter onto hot waffles iron. Cook according to instructions.

Ps: for extra crispness leave the waffles in the maker for a longer time even when the light goes off!


Serve with maple syrup or gula melaka! But actually, pandan waffles is already very flavourful by itself! 


I love a quick breakfast like this. ^^

I do know that some waffles recipes requires you to separate the eggs then do this and that. When I encounter such a recipe, usually I'll just give up. lol!

IM SO HUNGRY IN THE MORNING AND YOU STILL WANT ME TO DO SO MANY THINGS?!

Ok. It's just the lazy me. 

Happy that a number of my Dayre followers have tried this recipe and told me that they love it! I would really recommend this recipe to try it at home! :)
