Portuguese egg tarts and Mueh Chee

Drove down to MOE this morning and finally signed the agreement letter. So hello to 4 years of being a teacher! :) 

I'm a hardcore baker these days. haha! Settled my lunch and started baking! :P 

1. Portuguese Egg tarts 


Ingredients & Method (hankerie)
Pastry:
1 cup flour
2 tbsp caster sugar
4 tbsp butter
2 tbsp water
Filling :
3/4 milk
2 Large eggs
3 tbsp caster sugar
Method :
  1. Mix the flour, sugar, butter and water.
  2. Chill it while preparing the filling.
  3. Beat the eggs. Add the milk and the sugar.
  4. Preheat the oven at 180 degrees.
  5. Divide the dough into 6 to 8 balls.
  6. Flatten them into the pans.
  7. Spoon the custard into the shells.
  8. Bake for 30 mins or until set.

I really recommend the above recipe! I think it's the simplest one I have ever come across! Will definitely try again with a smaller mold! As you can see, my mold is kinda too big. :/ Anyways, my brother was over-joyed to see the egg tarts! :D Ate them while they were still warm, really good!!! 

2. Mueh Chee


Ingredients: (Mikiko)
250g glutinous rice flour, 375g water, 3 tbsp sugar
Method :
1. Mix all the ingredients and stir well.
2. Pour the mixture into a lightly oiled pan and steam for 40mins
3. Let it cool before spooning and toss well with grounded peanuts and sugar. Ready to serve!


Steamed and cooled. 


Done! 

Apparently this is my mum and my favourite snack! hehe! :) Ate it while I was tossing them with the peanuts and sugar. Yum yum! :P

Bascially spent the whole afternoon in the kitchen and I'm loving it! :D
