Recipe: Danish Apple Cake


For some strange reason, my Dad just don't get that nobody in the family likes green apples. Well, not that my dad like green apples. He doesn't as well...

 I know right. It's so complicated. Haha!

Anyway, so my fridge is perpetually filled unloved green apples. Mehs. ;/ 

While the OCD in me just can't stand food being left in the fridge for long! Haha! I have to find ways to get rid of those green apples.

It as a fruit served to my family obviously failed. We dislike the sourness of the fruit. T.T

It as an ingredient in salad failed as well. The sourness is still there~

Not giving up!! 


Then came one day, when I was baking.

The light bulb finally flashed! 

Aha!

I could bake an apple cake/pie! 

Haha!

Damn dramatic, but that was truly how I felt. :D

With a bit of research, I decided on a Danish Apple Cake, adapted and modified from here. :)

ps: I modified mainly on the sugar level as I know my family prefers a less sweetened cake. ^^


Ingredients:
150g butter, softened
3 eggs
180g plain flour
120g sugar [80g caster sugar plus 40g extra]
1 tsp baking powder
2 tsp ground cinnamon
2 tsp vanilla extract
5 green apples, peeled, cored and cut into thin wedges

Method:
1. Preheat oven to 180°C. Brush the base and sides of a 22 cm tin with melted butter and line the base with non-stick baking paper.
2. Use an electric mixer to beat the butter, sugar and vanilla until pale and creamy. Add the eggs one at a time, beating well after each addition. Sift together the flour and baking powder. Add to the butter mixture and mix on low speed until just combined.
3. Combine the extra 40 g caster sugar and cinnamon and set aside. Spread half the cake batter over the base of the prepared tin. Arrange half the apples over the batter and then sprinkle with half the cinnamon sugar. Repeat with the remaining cake batter, apples and cinnamon sugar.
4. Bake in preheated oven for 60 minutes or until cooked when tested with a skewer, covering with a piece of foil in the last 15 minutes of baking if the cake is browning too quickly. 
5. Serve warm or at room temperature with thick cream or vanilla ice cream.


I dare say this is a pretty simple bake that looks complicated.

Just like woman? :P

Now, I won't even complain if my Dad buys back the wrong type of apple aka green apple. Even the family loves the cake too! :D
