Recipe: Banana walnut loaf *gluten/sugar/oil/dairy/egg-free*

Modified my Banana cinnamon loaf *sugar/oil/dairy/egg free* and made it gluten free this time round! :)

ps: I've zero knowledge about gluten or no gluten, just trying with new flour! :P

Ingredients:
4 medium sized ripe bananas
1.5 cups oat flour
1.5 tsp baking powder
0.5 tsp baking soda
whatever amount of chopped walnut you want

Method:
1. Preheat oven to 180 degree C.
2. Mash and blend the bananas.
. 3. Sift together the flour, baking soda and baking powder before folding into (2).
4. Stir in the chopped walnut before pouring the batter into a lined tin.
5. Decor the surface of the batter with more walnuts. Bake at 180 degree C for 30-40 minutes or till a skewer comes out clean.

Some of you asked if I can use this or that flour, which I have never tried before. My take is bake first, worry later. That's the fun of making food right? ^^

Comparing with plain flour, the texture for oat flour is less fine and smooth, nonetheless the taste didn't differ much in my opinion. I especially love the walnuts, because I'm crazy for nuts! :D

Probably will be trying with almond flour next time since I've plenty at home! Maybe with some dried fruits tossed in? Perhaps chocolate chips? Haha! #Iliketotalktomyself.

Love,
Lirong.
