Recipe: Buttermilk cake *oil/butter free*


We have heard of how amazing it is to add buttermilk in our breakfast pancakes. But have you heard the same for cakes?

Well, at least not for me. :P 


This is a really fuss free cake recipe that is a true keeper for me! 

No mixer needed, just mix, pour, bake! All done in 10 minutes! 

Not including baking time of course. 


Ingredients:
1 cup all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp cinnamon powder
pinch of salt
1 egg
1/2 cup buttermilk 
1/3 cup Greek yogurt 
1 tsp vanilla extract
dried fruits / chocolate chips (optional or you may like to add in nuts)
icing sugar (optional)


Method:
1.Preheat oven to 180 degree Celsius. Line an 8-inch square pan with baking sheet and grease the sides.
2. In a large bowl, whisk together the dry ingredients, flour, sugar, baking powder, cinnamon and salt.
3. In a separate bowl, whisk together the wet ingredients, egg, buttermilk, Greek yogurt and vanilla extract.
4. Add the wet batter to the dry, mixing lightly with a spoon until just combined (don't over-mix, otherwise cake might turn out rubbery).
5. Fold in dried fruits and chocolate chips (or anything that you like).
6. Pour batter into prepared pan and sprinkle some dried fruits and chocolate chips over the surface (the more the merrier ya? :P)
7. Bake for 30 minutes, or until a skewer inserted in the center comes out clean. Allow the cake to cool before slicing to serve. 


It is really amazing how 1/2 cup of buttermilk (and perhaps the Greek yogurt too) could do such a magic. No oil or butter and with just an egg, yet the cake came out to be so light and moist. I could cry. :')


I always love to dust a bit of icing sugar to pretty up the cake. :D


The boy and I agree that it tasted like Malay steamed cake, Ma Lai Gao, but definitely so much easier to bake and healthier as well! ^^


Already planning to bake another one with walnuts maybe? Or perhaps a swirl cake? Hmm..

    I wanted to bake this healthy cake after reading no butter/oil and yet tastes like "Ma La Guo" (I know Ma Lai Guo used a lot of oil) but the buttermilk comes in big pack at Giant supermarket which puts me off from buying. I do not know what to do with the left over buttermilk after.

    Perhaps, when there are other recipes which call for usage of buttermilk, I will use your recipe for future baking.

  2. hi! just to ask if the all purpose flour can be substitute with cake flour? is the cinnamon powder compulsory??

      Yes, you can substitute with cake flour. :) Nope it is not, just a personal favourite for the taste of cinnamon. You can take it out, it wont affect the texture of the cake.

I want to for you to prepare this specific balanced meal immediately after looking at zero butter/oil nevertheless style similar to "Ma Chicago Guo" (I realize Ma Lai Guo applied a great deal of gas) though the buttermilk also comes in major group in Massive store which in turn applies us far from acquiring.
